Cabbage, Beet, Apple and Ginger Slaw

With its brightly coloured and crunchy veggies, this salad is great for stimulating digestion through our eyes, nose, and taste buds. A little bit of a crunchy raw salad such as this at the beginning of a meal can help turn on your digestive juices with the physical action of chewing as well. Prep & Cook Time: 30 minutes

Ingredients

6 cups cabbage, thinly sliced
¾ cup carrots, coarsely shredded
¾ cup raw beets, coarsely shredded
¼ cup red onions, finely chopped
1 large apple, shredded
6 tbsp  mayonnaise (look for organic, few ingredient mayo)
¼ cup plain organic yogurt
3 tbsp raw apple cider vinegar
1 ½ tbsp. raw honey
Unrefined sea salt and freshly ground pepper, to taste

Directions

In a large bowl, combine cabbage, carrots, beets, onions, and apple.
To prepare the dressing, in a small bowl whisk together mayonnaise, yogurt, vinegar, and honey.  Pour over vegetables and toss until well mixed.  Season with salt and pepper.

*Therapeutic Upgrade – to help stimulate appetite and saliva production, try adding cayenne pepper to the dressing, grate some fresh ginger in with the veggies, or top the salad with raw pumpkin seeds or diced avocado.

There are many sources of ‘externally-created’ There are many sources of ‘externally-created’ stress in our lives, especially during these restrictive times. 

For example, our increased exposure to mass media can unconsciously sap our energy and have negative impacts on our lifestyle.

Fortunately, there are some simple solutions that we can use:

* Be discerning about what we choose to watch and read
* Read books and articles that celebrate human nature
* Remove ourselves from negative TV and social media imagery
* Spend socially distant/online time with those we enjoy

Let's be sure to watch for and minimize our external stressors. Most of us can be unaware of the degree to which we are affected by them.
